ISO 22000 - Food Safety Management Systems (FSMS) - Requirements

 

Introduction

 

Keeping food safe from farm to fork by ensuring hygienic practices and traceability at every step of the supply chain are essential tasks for the food industry.

 

​Whatever their size, or product, food producers have a responsibility to manage the safety of their products and the well-being of their consumers. As many of today's food products cross national boundaries, International standards are needed to ensure the safety of the global food supply chain.

Food safety

Food safety is:

  • Scientific discipline describing handling, preparation, and storage of food in ways that prevent food-borne illness.​

  • Linked to the presence of food-related hazards at the point of consumption.

 

Food safety considerations include:

  • Practices relating to food labelling, food hygiene, food additives and pesticide residues

  • Policies on biotechnology and food

  • Guidelines for management of governmental import and export food inspection and certification schemes

  • Safe food handling procedures from market to consumer.

ISO 22000 Family of Management System Standards

ISO is developing additional standards that are related to ISO 22000. These standards will be known as the ISO 22000 family of standards.

 

At present, the following standards comprise the ISO 22000 family of standards:

ISO 22000        Food safety management systems - Requirements for any organization in the food chain.

ISO/TS 22002  Prerequisite programmes on food safety: Part 1: Food manufacturing; Part 2: Catering; Part 3: Farming; Part 4: Food packaging

                         manufacturing; Part 5: Transport and storage; Part 6: Feed and animal food production

ISO TS 22003  Food safety management systems - Requirements for bodies providing audit and certification of food safety management

                         systems.

ISO TS 22004  Food safety management systems - Guidance on the application of ISO 22000:2018.

ISO 22005       Traceability in the feed and food chain - General principles and basic requirements for system design and implementation.

ISO 22006       Quality management systems - Guidance on the application of ISO 9001:2008 to crop production.

 

ISO 22000 (the "Standard")

"ISO 22000:2018, Food safety management systems - Requirements for any organization in the food chain":

  • Is a general derivative of ISO 9000

  • Is an ISO management system standard (MSS) that sets out the requirements for a food safety management system

  • Defines what an organization must do to demonstrate its ability to control food safety hazards and ensure that food is safe for consumption.

The Standard specifies the fundamentals and requirements for food safety management systems when an organization in food chain needs to demonstrate its ability to manage food safety-related hazards to ensure food safety at the moment of food consumption.

Certification to ISO 22000

Independent confirmation of management system conformity to the requirements of ISO 22000 may be obtained from third party certification bodies.

 

Organizations, seeking confirmation of their food safety management systems can use this standard for certification and fulfilment of contractual obligations.
